Salted Peanut Cookies
I love a good cookie, I love peanuts and I love salt! So here’s a pretty simple recipe for a salted peanut cookie. I made mine in the food processor as it’s so easy. You could make it in an electric mixer too.
115g softened butter
200g brown sugar
1/2 teaspoon vanilla extract
1 free range egg
125g plain flour
1 teaspoon baking powder
150g salted peanuts
Sea salt for sprinkling
Preheat oven to 175° C. Line a baking sheet with baking paper.
In a food processor, cream butter and sugar until the mixture is well combined. Add vanilla extract and egg and mix well. Add the flour and baking powder and pulse to combine. Stir in the peanuts by hand.
Drop tablespoons of the mixture on the baking sheet, making sure the cookies are not too close together as they will spread. Bake for about 10 minutes, or until the cookies are golden brown. Remove from oven and place on a wire rack. Sprinkle some sea salt over the cookies while still warm and leave to cool until the cookies have firmed up. Store in an airtight tin. They also freeze well.
