BANANA NUTTY LOAF

This is a yummy, super easy banana loaf that’s all done in the food processor! It’s healthy, too, using oil, honey, wholemeal flour and nuts.


3 medium bananas
75g vegetable oil
150g honey

2 free range eggs
50g milk

1 teaspoon vanilla extract or paste
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon grated nutmeg
1/2 teaspoon ground ginger
110g plain flour
110g wholemeal flour

100g walnuts, or walnuts and hazelnuts



Preheat the oven to 170°C. Grease a 21 x 11 cm loaf tin and line the base with baking paper.

Put the bananas into the bowl of a food processor and blitz until the bananas are mashed. Add the oil, honey, eggs, milk and vanilla and process until everything is incorporated.

Put all the dry ingredients except the nuts, into the food processor and pulse until just combined. Don’t overmix. Stir in the nuts.

Fill the lined loaf tin with the mixture and place in the oven. Bake for 50-60 minutes or until a skewer inserted in the loaf comes out clean.

Remove from the oven and leave to cool for 10 minutes before turning out onto a wire rack.

Serve warm, or at room temperature, on its own or with lashings of butter. I added my favourite raspberry jam, just delicious!

Oh, and slices of banana loaf toast well too!
