Strawberry Almond Cookies
I love almond cookies - and these have a hidden strawberry centre, giving them a jammy chewiness. Pretty easy to make too!
125g egg whites
220g caster sugar
210g ground almonds
1 teaspoon almond extract
1/4 fresh strawberry for each cookie
100g icing sugar
Preheat the oven to 180°C 160°C fan. Line 2 baking trays with baking paper.
Whisk the egg whites till frothy and beginning to firm. No need to beat until stiff. Add the caster sugar and grounds almonds and the almond extract and mix to a stiff paste.
On a board or large plate, take walnut sized pieces of dough and flatten with the back of a spoon or just use your fingers. Put a 1/4 strawberry in the middle and enclose with the flattened mixture.
Put the icing sugar in a shallow bowl and roll each ball in the icing sugar. Place balls on the baking trays, leaving space between each ball.
Bake for 12 minutes until just beginning to colour. They may need a minute or two more.
Remove the trays from the oven and leave to cool for 10 minutes. Remove from the trays and roll each ball in a little more of the icing sugar to serve.
